Our perfect Springerle recipe

The ingredients

  • 4 large eggs, approximately 8–10 days old
  • 500 g icing sugar,
  • 500g (dry) flour type 405 or 450g spelt flour type 630
  • 1-2 tablespoons of whole anise or, depending on preference, gingerbread spice, cardamom, ginger or similar.
    Emma's tip: Lightly roast the anise in a pan beforehand. This releases the essential oils and allows it to develop its full flavor.
  • Cornstarch for dusting
    Emma's tip: The best way is to fill a few tablespoons of powder into a thin sock and tie the end closed. This little bag makes it easy to dust the dough with powder before shaping it.


The preparation

  • Beat the eggs until frothy, then add the icing sugar.
  • Mix in the roasted/crushed anise.
  • Mix this mixture well. Then, stir in the flour using a dough hook.
  • The dough is still a bit soft and needs to rest before shaping. Place it in a bowl with a tight-fitting lid, cover it with cling film, and let it rest in the refrigerator for at least 12–24 hours .

  • Now cut off a small portion and immediately cover the remaining dough again, otherwise it will dry out. Roll out the cut-off piece of dough on the powdered baking board to a thickness of 8-10 mm.
  • Press the Springerle mold into the lightly powdered dough and cut out the Springerle using a dough scraper, pastry wheel or suitable contour cutter.
  • Place the blanks on a baking sheet covered with reusable baking foil and let them dry in a warm place for 24 hours .

  • Preheat the oven (convection) to 140°C and bake the Springerle for approximately 15–18 minutes. (For conventional oven, bake at 150°C for approximately 20 minutes.)
  • The Springerle cookies are ready when the base is light brown.

After baking, let the Springerle cool on the baking sheet, remove them from the foil and store them in a cardboard box in a damp place (e.g. balcony).
